Vegan Banana Coffee Cake

Strange as it can be... there are some baker's recipes which I can never get it right! Here's another flop - you see tell with eyes that it is simply too dry.

Vegan Banana Coffee Cake

Ingredients:
4 ripe bananas, mashed
2 cups Self Raising Flour
100 g Margarine or Vegetable Shortening
1 tsp ground cinnamon powder
1 tsp ground nutmeg powder
2 tbsp strong Instant Coffee, crushed
70 g light brown sugar

Method:
In a large mixing bowl, add sifted flour, cinnamon, nutmeg.
Melt margarine and mix with coffee powder and sugar.
Add margarine mix to flour and fold in slowly.
Add bananas last and mix.
Line a bake tin with greased paper. And pour cake mix into it.
Bake in a preheated oven of 180 C for 30 mins.
Remove from pan, cool completely before slicing.

    I will need some experienced baker to help troubleshoot the recipe first. I think the ratio is out, which is why it is so dry... but I do not have time to do the detail calculation yet.

    If you are planning to make it, try to add some milk.

  3. cookie, margarine or shortening is pure TRANS FAT. not very healthy. if you can, subs it with olive oil or corn oil or sunflower oil. the cake is dry because there isn't much liquid. too dry. if cannot go for milk, try using fruit juice or water. Melt the coffee in 50ml of hot water first before adding the rest to mix.

    For now, I am struggling to get the birthday cake for my son's birthday next week. Start to panic liao! =p

  5. cookie, do the steamed chocolate cake. the recipe is at KC. leave it to cool, then plaster it with fresh cream and dark cherries(canned) or blend strawberries till pureed stage..add to the whipped cream. You may need to add sugar as the s'berry may be sour. then decorate it with things he like. its gifts that made with love that are MADE with LOVE..!

    I have done the steamed choc cake, YES, it is really good! But this time round I can't cos I am putting an icing image over it, and the cake size is 10x8" which I can't fit into my steamer.

    I am going to try the sponge cake recipe tonight. if still ta-boleh, then I need to go your house for SOS! Haha.
