Cooking with Chef Veronica - Porcini Risotto

Following ma's passing, we observed her religious practice to abstain from meat & alcohol. 
 
I took this vegetarian class with Chef Veronica Cherry from Food-to-Serve to add new item to my repertoire.  Chef V is a very patient and helpful instructor who has loads of tips for us... I enjoyed her class very much.
 
Porcini Risotto is a very yummy Italian mushroom rice, and best part, it is vegetarian!  After you learn how to cook this, you no long willing to pay so much for the simple dish in those fancy restaurants.
 

 

What you will need:

300g       Arborio rice                       
500ml    Vegetable Stock (must be hot at all time)
3 tbsp    Olive oil                               
2              Shallots                               
60-80g   Porcini mushroom (Soak 30minutes before use), Keep the soaking water
2 tbsp    Freshly grated parmesan cheese                                             
30g         Butter                   Cube, keep cold
1 tbsp    Fresh herbs (Parsley, chives, chervil)
Salt & Pepper to taste.
 
How to do it:
1) Heat 1 tbsp of oil in a deep sauté pan and add the shallot to fry for 2-3 minutes or until softened. Stir in the rice and to coat with oil.  Allow the rice to cook for 1-2 minutes.
2) Add 1-2 ladles of stock to rice. Stir the rice and allow the rice to absorb the stock.   Add the porcini mushroom into the risotto. Cook the rice for 1-2 minute and add the soaking water to the risotto for extra flavour.
It is important not to add too much stock to the risotto. Only add the stock a ladleful at a time, allowing each addition of stock to be absorbed before adding another ladle.
3) When the risotto is al dente (firm to the bite), remove the pan from the heat. Add cold butter a few cubes at a time; stir to mix the butter into the risotto. The risotto should be moist and creamy at this stage.  Add in some grated parmesan cheese into the creamy risotto. Season the risotto with salt and pepper.
4) Garnish with fresh herb and grate some more parmesan cheese if desire. Serve immediately.



Tips: 

Adding cold butter to the rice allows the proper emulsifying...  otherwise you may end up with oily rice.

Chocolate Moulding Class at Artistiq Sugarpaste

I guess I should have known better that this is a chocolate moulding class when I signed up. For only $60, I should not expect to learn about tempering chocolate - a process where temperature control forces chocolate into one particular crystalline form so that when molded it forms a stable solid with a smooth shiny surface.

But again, if it is simply melt and pouring into the mould, I have already done it with Sheen before.

Since I am already here, I might as well have some fun!

Class at Culinary Adventures


Early this month, I attended a culinary class with my colleagues. It is quite interesting cos it is the first time in my life that i was told NOT to follow the recipe strictly when baking.


For example, the recipe calls for 185ml fresh milk. I only added 50ml, the Irene (the instructor) told me it's enough.


The same go for flour, cocoa powder etc. Everything is added based on "agatation" cos there's no weigh scale for us to check the weight.

How interesting, we add, stir, and whisk with only our instinct. Everything was 跟着感觉走 ! I was so eager to taste the cake once it was out of the oven cos it is the first time I make an "aga" cake. Strange as it can get, the chocolatey cake actually turned out to be yummilicious!

However I do see others flopped. I can see the butter bubbling on the surface of the cake while they are being baked. To me, that's pretty much like frying the cake, then baking!


Whichever the case, I had good fun with J and HI at the class. Thanks Ladies!

Snow Skin MoonCake

Bevis attended the moon cake making class at Genius-R-Us together with his 2 fav cousins, Gwen In and Gwen Kit last Sunday - in our unique way, a mid autumn festival celebration.



Each of us took back 6 pcs of mooncake. Not bad for the fee that we pay. I only wish they would use the authentic disney mooncake mould... not these!



Mickey Mouse - doesn't look like to me, but that's what the instructor "claim" to be.

Proud Bevis brought the boxes of moon cake to school on the following day to share with his teachers and friends. To a 3-yr-old, he deserves the recognition for begin able to roll, knead and mould the mooncake all by himself!

Back to the Classroom!

After attended the Cookie Decorating Class with Kooky Art , I have been checking out the "proper" classes that several chef's offers; Gina's class is usually on weekends, so is Anna and Jocelyn. Believe it or not, it is much much much more difficult for me to take time out from my family than from work! Tsk Tsk.

You can imagine my excitement when I found the Wilton's CookieBouquet class at b-i-y. The class (or workshop, so they name) is held over 2 session; 90min on Sat evening (where Bevis is away for his gymnastic), 2 hours on Friday (where annual leave comes to play).

It is in time to pick up some skills for some Christmas baking, I hope =p

Kooky Art



I signed up for the Cookie Decorating Class at Kooky Art last Saturday. I was hoping to learn some decorating technique but as you can see... it's more of a fun morning for Bevis!
Bevis slurps up all the overflowing icing! Yum!

Genius R Us



Bevis and I attended a workshop at Genius R Us... To me, this is a getaway rather than for learning; life is much easier when you have all the ingredients laid out for you. No washing, no cleaning up.... Sigh, if only every baking session at home is like that :-)

Back to this workshop, we made 5 items with melted chocolate:

  • strawberry with choc coating.

  • Marshmellow choc with colourful beads.

  • Moulded chocolate

  • cornflakes chocolate cup

  • almond chocolate cluster


There were supposedly another child in the workshop but he/she didn't turn up so we enjoyed the full attention from the 2 jie-jie! This is what we call value for money!

I was so laid back that I forgot to take some photo of the things that we made, save for this moulded chocolate.




As for Bevis, you can see him obviously enjoying himself... slurping up the chocolate every now and then!
